Trader Joe’s Ultimate Guac Recipe

This will guac your world!!!!

Yallll this guacamole is amazing. I have now made this recipe for many different groups of people and let me tell you its always such a darn hit. It’s definitely one of my favorite guacs of all time, and it’s so freakin easy!!

Let’s get right to it!! (Because I decided from now on I’m typing the majority of my commentary AFTER the recipe so you don’t feel like freakin Nicholas Cage on an American scavenger hunt trying to find the damn recipe..)

Trader Joe’s Ultimate Guac Recipe

🕑 Prep Time: about 10 mins
🍴 Yields: about 10 servings

🥑 3 Ripened Avocados
🥑 Trader Joe’s ‘Corn and Chili Tomato-less‘ Salsa
🥑 Trader Joe’s ‘Chevre with Honey’ Goat Milk Cheese
🥑 Trader Joe’s Pomegranate Seeds

1. Cut avocados in half and mix into serving dish. (Keeping the pits in will prevent it from browning!)
2. Scoop and mix in about 1/2 of the jar of corn salsa.
3. Sprinkle in about 1/3 of the honey goat cheese log.
4. Mix together. (I find it better to mix thoroughly so the cheese is blended well.)
5. Add an additional few scoops of corn salsa for presentation.
6. Top with pomegranate seeds to your liking!
Serve within an hour of preparation for optimal presentation; leaving the pits will give you a little more leeway before the avocado browns!

So how did this fabulous recipe evolve?! Well the goat cheese-corn salsa combo was actually a Trader Joe’s free sample (they mixed these two ingredients with their pre-made guac but I definitely prefer using fresh avocados). One bite and I was hooked! Then I remembered the guac I had when I was in London this past fall; I was dining at a Mexican restaurant called Wahaca, linked here. They topped their guacamole with pomegranate seeds (I think they were going for a red and green Christmas-y theme) and it was sooo good. Trader Joe’s just so happens to have pre-packaged pomegranate seeds, hence the ultimate guac recipe was born!!

Guac is cool because there are so many different renditions it’s usually delicious no matter if you go the salty or sweet route; I like this particular recipe because it’s a little bit of both!

If you try this and happen to love it and/or make any additions, I’d love to hear all about it!!
